This was last night’s dinner and it hit all the marks: fast, simple and so savoury. I’m not usually crazy about stir fries..only that they remind me of my university days when it was the only thing we knew how to make...when every dinner was pretty much the same. Fast forward and it’s now a go to meal. I love toasted pearl couscous. It’s texture is much more interesting to me than a flat, starchy orzo. Pair it with this marinade and you’ve got a great week night dinner.

Posting this recipe might not be great for business as I don't stock any of these items, but I made it this week and it's so good, I need to share it. There's something about tofu that really does give this sauce texture and the spices work well. My only suggestion would be to use light soya sauce as Nora suggests. I only had regular which was fine but light would be the way to go.
