Best Vegan Lentil Bolognese!

I’ve tried quite a few recipes for lentil bolognese during the past couple of years. All were good but this one by Crowded Kitchen is a standout! And you know me by now good isn’t good enough. I want GREAT! What makes this recipe different from the others I’ve tried is cooking the lentils on their own and only adding them at the very end once the tomato sauce has cooked for at least 1hr. The lentils are firm, not mushy, and simmered in a vegetable broth(I used mushroom bouillon) adds a really nice depth of flavour. The tomato sauce is a wonderful blend of vegetables and spices and comes together exceptionally well with the addition of the French lentils at the end. This makes a big batch and freezes well :)
