BEST Banana Oatmeal Muffins

Jim Lahey is indeed my bread mentor but my bread journey began with Jenny Can Cook’s recipes for crusty rolls and Dutch oven boules. Here’s another standout: Banana Oatmeal Muffins. No other muffin recipe comes close to this one: big, light,and moist with a yummy pecan (or walnut....I only ever seem to have walnuts on hand) crunchy topping :)
